Kathryn Mennia Cooper Hunt

June 11, 1940 — Oct. 30, 2022

Our extraordinary mother, grandmother, aunt, and friend Kathryn Mennia Cooper Hunt, passed through this mortal life to the other side of the veil on Oct. 30, 2022, in St. George, Utah. Kathryn (Kathy) was born to Sherman Cooper and Grace Bushnell Cooper on June 11, 1940, in Delta, Utah. 

Kathy spent her carefree childhood in Washington City, Utah, amongst her Cooper relatives, riding her blue bike and swimming at the boilers. She graduated from Dixie High School in 1958 and married Darwin Samuel Hunt shortly after. They moved to Fillmore, Utah, where they raised their family.

Because Kathy was a history lover, she treasured her time working at the Utah Territorial Statehouse. She had solid roots in the gospel of Jesus Christ and a strong connection to her ancestors. Kathy recently visited England and South Carolina to see where her great-grandparents lived. She was a longtime member of the Daughters of the Utah Pioneers.

On her 50th birthday, Kathy was accepted to nursing school. Kathy was compassionate and kind and nursing was the perfect career. She served an LDS service mission in Vietnam, teaching medical and dental students English and providing much-needed medical care. Her Vietnam experience blessed us by adding Luyen Mai Taylor and Linh Huynh to our family.

To us, she was the best mom and grandma in the world. Kathy knew what was important in life: her family and friends. She understood the designs and purposes of God, looking forward to a glorious, long-awaited family reunion with her parents and other loved ones. Kathy lived life with dignity, patience and impeccable integrity. She served others without fanfare. We are grateful for her example of perseverance and the unconditional love she showed us no matter where we landed or how far. Kathy’s easygoing nature made adventure fun. Her witty, amusing, great sense of humor will be missed, along with her “oh my heck.” 

We love you, mom and grandma! Thank you for always being our friend.

She is survived by her children, Colette Takahashi (Gary), Gregory Hunt, Leslie Christensen, and Tiffanie Matthews (James). Fourteen grandchildren and nine great-grandchildren. Her parents, brothers Grant (Ruby Schow), Jay, Romney, and a sister Zola (Joseph V. Barker) preceded her in death. She was also preceded in death by two sons-in-law, LeRoy Taylor and Jesse Christensen, her daughter-in-law Ruth Murdock Hunt and her former husband, Darwin Samuel Hunt.

Funeral Services for Kathryn will be held at 11 a.m. on Monday, Nov. 7, 2022, at The Church of Jesus Christ of Latter-day Saints building 259 N. Mall Drive, St. George, Utah. A viewing will be held at the same location Sunday evening from 5 p.m. to 6:30 p.m. and Monday morning from 9:30 to 10:30 a.m. Her interment will be held in the Meadow City Cemetery on Monday, Nov. 7, at 3 p.m. She will be laid to rest by her brothers Jay and Romney, her grandparents, and great-grandparents.

Memorial donations may be made to The Church of Jesus of Christ of Latter-day Saints Humanitarian Aid Fund in Kathryn’s honor.
