Ivins woman combines passions of health and baking in business making sugar-free desserts

IVINS —A bakery run by one woman proves that eating dessert doesn’t have to be enjoyable one minute and regretful the next; with the addition of healthier ingredients and removal of sugar and gluten, her treats lack anything but flavor.

Nicole Morrill, owner of Find Your Fit Bakery, told St. George News that it was her lifestyle that led her to explore healthier dessert options that still fully satisfied her sweet tooth, a journey that ultimately turned into a successful full-time business.

Morrill said she’s been baking since she was a little girl and has always had an interest in health and fitness. While she now has been sugar-free for 11 years, her sweet tooth never went away. During this time, she combined her love of baking with her passion for fitness, creating her own healthier versions of popular treats, allowing her to eat them guilt-free.

Morrill turned her love for baking unique treats into a business amid the pandemic in 2020. When she first started making treats specifically for her business, she offered donuts, bars and cookies. She continued to spread the word of her treat business via social media and also started attending the St. George downtown farmers market as a vendor. The coffee shop, Affogato, now permanently closed, also sold her dessert items.

“It’s well needed,” she said of her bakery items. “A lot of people are diabetic or on keto, and a lot of people just want to be sugar-free and gluten-free or dairy-free. Everything I offer is always keto-friendly, low-carb and both gluten-free and sugar-free.”

Wanting to continue offering her treats after the seasonal farmers market ended, she said she decided to offer online ordering along with a delivery service, where she now delivers orders every Friday.

As far as pricing goes, Morrill said she tries to keep the pricing the same across the board, with most individual items priced at $2.75 each. Prices change a bit when ordering multi-serve, such as a pan of cinnamon roll cake or french almond cake, which average about $20. She also does a lot of custom cake orders, which range from $35 to $45.

Unfortunately, she said, the price of some ingredients has increased due to the economy, but she has been putting off raising her bakery prices.

“I might have to raise them a little bit at some point, but I hate doing that,” she said. “That’s my dread, you know.”

Mandee Krajnc, a now St. George local who has been on a ketogenic diet for two years, said while there are other places in town that offer keto-friendly options, most are limited to cupcakes only. In the summer of 2020, she had a friend mention there was a keto bakery at the farmers market.

She lived in Mesquite at the time but happened to be in St. George one weekend when she made a visit to the bakery booth at the market. She purchased a chocolate chip cookie and a cupcake – two items that instantly hooked her, she said. The next weekend she woke up early to make the drive from Mesquite to the farmers market and ordered weeks worth of treats.

“In September of that year I also had her make me a birthday cake and it was delicious,” Krajnc said.

Krajnc said she continued to make the weekly drive from Mesquite to St. George to order more from Find Your Fit Bakery. She said she was so happy when the market ended and Morrill offered her delivery services. She has been ordering from Morrill on an almost weekly basis since. The only problem now is deciding which one she favors most, as she has loved every item she has tried, she said.

“The double chocolate dipped and coconut donuts are my favorite,” she said. “I highly recommend the burnt almost fudge brownie and the cowboy cookie. The old-fashioned cupcake reminds me of my childhood and if you are going to order a full cake, I suggest the hot chocolate cake.”

Krajnc also said that Morrill has created an amazing business out of her love for healthy baking. She said she tried keto baking and it wasn’t easy to make them taste even close to as good as the treats she ordered from Find Your Fit Bakery. 

“Her baked goods are delicious, but the bonus is her,” Krajnc said. “She is so kind and personable. After two years of weekly orders, I feel like she has become my friend. The day my dad passed away she was one of the first people at my door.”

Krajnc said that her father loved the donuts, adding that his favorite was the coconut ube and that Morrill would let her know when it was going to be on the menu.

Morrill said she loved delivering to Krajnc’s home in Mesquite, where she would order one week, and Krajnc’s father would order the next. She had the opportunity to get to know Krajnc’s father during these visits before he died late last year.

When it comes to her creations, Morrill said that while she has had some inspiration, all of the recipes she uses are completely her own.

“I love that people are trying to be healthier and more conscious of what they put into their bodies,” Morrill said. “I’m just really glad that I can create tasty treats that everyone can love while still taking care of themselves.”
