What’s Going There: A rundown of newly opened and relocating restaurants around St. George

ST. GEORGE — Piles of lumber, tractors, workers walking around in hard hats – welcome to Southern Utah. The area’s growth is seemingly unstoppable, with new buildings and renovations springing up everywhere you look.

In this episode of “What’s Going There,” Southern Utah’s show about developments and businesses in the works, Tom Callister with Linx Commercial Real Estate toured around town to highlight a handful of newly opened and recently relocated restaurants offering everything from Mexican favorites to vegan dishes.

Chubby’s Cafe has just opened up on Bluff Street. Featuring grass-fed beef from the Midwest that’s grain-finished and never frozen, Chubby’s Cafe is a family-owned business with nine locations throughout Utah.

Business is booming along Red Cliffs Drive with the addition of The French Bakery, which offers artisan bread, savory and sweet pastries, classic coffee drinks and more. There’s also a new Costa Vida location, bringing fast and fresh Mexican foods to the east side of town.

And don’t forget about Utah favorite Cubby’s, which recently opened its 14th location. Cubby’s offers salads, sandwiches and burgers made with an emphasis on local ingredients, including grass-fed beef, cage-free chicken and organic produce.

Mixed Greens, serving fast, fresh and healthy eats, recently moved from Santa Clara to St. George Boulevard. Check out their açaí and poke bowls, salads and smoothies.

“It used to be if you wanted good food, you had to come down to Ancestor Square by my office,” Callister said. “Now, it’s getting spread out all over town. It’s exciting to see the growth with all these restaurants and different options that we have here to eat.”
